‘Menma’ is made from fermented bamboo shoots and it is a very popular topping for Ramen noodle soups. It is tricky to make ‘Menma’ at home as it involves drying and fermentation processes. But this ‘Braised Bamboo Shoots’ tastes quite similar to Menma and it is so easy to make. I use tinned bamboo shoots that are available from any grocery stores.
1 to 2 servings
Tinned Bamboo Shoots (Sliced) 1 Tin (230g)
Sesame Oil 1 teaspoon
Soy Sauce 1 tablespoon
Mirin 1 tablespoon
Sake OR Water 2 tablespoons
La-Yu (Chili Oil) some drops *optional
1. Drain the bamboo shoots and rinse.
2. Heat Sesame Oil in a saucepan and cook Bamboo Shoots for a minute or so.
3. Add Soy Sauce, Mirin and Sake (or Water) over medium heat and cook until the sauce is gone.
4. Add some drops of Chili Oil and mix well.
