
This simple Mandarin Jelly is popular in Japan where I grew up, and it is absolutely easy to make. You only need 1 can (310g) of Mandarine Segments and Gelatine Powder. I often crave it when I am unwell. Today I made it for my husband who was in bed with a cold. It can be a lovely treat OR dinner dessert.

Ingredients
3/4 teaspoon (about 3g) Gelatine Powder
1 tablespoon Water
1 can (310g) Mandarine Segments in Syrup
1/2 cup (125ml) Syrup form the can of Mandarine Segments *Note: Read ‘Method 1’
Method
- Sprinkle Gelatine Powder into Water in a small bowl and soak for 5-10 minutes.
- You would have 1/2 cup Syrup form a can. If not enough, add some Water.
- Place Syrup in a saucepan, and bring to the boil, stirring occasionally. *Note: This process can be done using a heat-proof measuring jug and the microwave.
- Once it’s boiling, remove from heat, add soaked Gelatine, and mix well until Gelatine dissolves completely.
- Place the drained Mandarin Segments in the serving glasses, and pour the jelly mixture. When cool enough, leave in the fridge until set.
