This is another quick and easy dish that you can cook with the cost-saving ‘Very Versatile Cooked Mince & Onion’. If you don’t have it, just cook Minced Meat and Onion with other vegetables that you have in hand. Japanese Curry Roux can be used to cook this dish if you have it.

Ingredients

125g Minced Meat *Beef, Pork, Chicken, etc.
1/4 Onion *thinly sliced OR finely chopped
*Note: You can use 1 serving (about 140g) ‘Very Versatile Cooked Mince & Onion’
1 small clove Garlic *finely chopped
1/2 teaspoon grated Ginger
1/2 tablespoon Oil
1 cupful Vegetables *cut into small pieces
*e.g. Today I used Carrot, Cabbage and Capsicum. Other recommended ingredients are Green Leafy Vegetables, Cauliflower, Pumpkin, Sweet Potato, Mushrooms, Eggplant, etc. Please use whatever you have in hand.
1/2 tablespoon Curry Powder
1/4 can (100g) Diced Tomato *OR Fresh Tomato, diced
1/2 tablespoon Plain Flour
1/2 cup Chicken Stock OR Beef Stock
1/2 tablespoon Soy Sauce
Salt & Pepper (OR Chilli)
1 serving warm Cooked Rice to serve

Method
  1. Heat Oil in a frying pan OR saucepan over medium heat, and cook all ingredients. Some vegetables, such as Baby Spinach, can be cooked very quickly. Cook the ingredients accordingly.
  2. When almost cooked, add Curry Powder and Tomato, and stir for a minute. Add Plain Flour and stir to combine, then add Stock of your choice, and bring to the boil, stirring. Add Soy Sauce, taste it, and add Salt & Pepper (OR Chilli) as required.
  3. Enjoy it with rice.
  4. *Alternatively you can use Japanese Curry Roux instead of Curry Powder, Tomato, Flour and seasoning. Use 1/2 cup Water instead of Stock, and add 20g Curry Roux block, then season it to suit your taste.
