‘Bacon, Egg & Cheese’ is often said the greatest combination. I agree, but I think ‘Bacon, Egg & Tomato’ is also a great combination. This soup can be made in a few minutes and tastes much better than the instant cup soups, so stop buying instant soups and try this soup!

Onion 1/2
Garlic 1 small clove *finely chopped
Bacon 2 slices
Olive Oil 1 teaspoon
Chicken/Vegetable Stock 400 to 500ml
Salt & Pepper
Tomato 1
Egg 1 *lightly whisked
Spring Onion OR Parsley

  1. Cut Onion and Bacon into small pieces. Cook Onion, Garlic and Bacon with Olive Oil in a saucepan over medium heat. When Bacon is slightly browned, add Stock and cook until Onion is soft. Season with Salt & Pepper.
  2. Cut Tomato into small pieces and add to the soup, then bring back to the boil.
  3. Gradually add the lightly whisked Egg to the soup. Add some chopped Spring Onion or Parsley and enjoy.
