Made with only 1/4 cup Oil, these Banana Muffins have much lighter texture than my ‘Banana Cupcakes’. Today I added sliced Bananas on top. These Banana pieces look good and also taste great.

Ingredients

2 cups Self-Raising Flour
3/4 cup Caster Sugar *OR 1/2 cup for less sweet Muffins
1/2 teaspoon Salt
1 Egg *whisked
1 to 2 Ripe Bananas *mashed
1 cup Buttermilk *at room temperature
1/4 cup Oil *I used Sunflower Oil
1 to 2 Bananas for topping *optional, sliced to 5-6mm thick

Method
  1. Preheat oven to 180℃. Line a 12-hole medium-size muffin tin with paper cases.
  2. Combine Self-Raising Flour, Sugar and Salt in a mixing bowl. Add Egg, mashed Banana, Buttermilk and Oil, and mix well. *Note: If the Banana is small, you might need to add extra 1-2 tablespoons Buttermilk.
  3. Spoon the mixture into the cases and place 2-3 slices Banana on top.
  4. Bake for 20 to 25 minutes OR until nicely golden and cooked through. Transfer to a wire rack and cool.
