I have a great Banana Cake recipe and it’s ‘My Legendary Banana Cake’, but the amount of the batter is not right for 12 cupcakes. I altered the recipe and made this new one that is perfect to make 12 cupcakes. You must use Very-Well-Ripe Bananas. I bake these cupcakes only when I have almost black Bananas that smell nearly fermenting.

Ingredients
125g Salted Regular Butter *softened
1/2 cup Caster Sugar *you can add extra 1-2 tablespoons
3 large Eggs *room temperature
1 & 3/4 cups Self-Raising Flour
1/4 cup Milk
2 large Very-Well-Ripe Bananas *mashed
Method
- Preheat oven to 180℃. Line a 12-hole medium-size muffin tin with paper cases.
- Mix softened Butter and Sugar in a large bowl until creamy. Add Eggs, one at a time, mixing well. Add Self-Raising Flour & Milk, mix to combine, then add mashed Bananas and combine well.
- Spoon the mixture into paper cases. Bake for 20 to 25 minutes or until golden and cooked through. Leave in tins for 5 minutes before moving onto a wire rack to cool.
