This ‘Basic Plain Muffins’ recipe is easy to remember and it is absolutely versatile. I understand that Muffin is basically a quick bread. The batter shouldn’t be too sweet. You can add Chocolate, Fruit and Nuts to create a variety of Muffins based on this plain batter recipe.

Ingredients
2 cups Self-Raising Flour
1/2 cup Caster Sugar
1/2 teaspoon Salt
1 Egg *whisked
1/4 cup Oil *e.g. Sunflower Oil
1 cup Milk OR Buttermilk
Method
- Preheat oven to 180℃. Line a 12-hole muffin pan with cases.
- Place all ingredients in a bowl and mix to combine. Spoon the mixture into each case. Bake for 20 minutes or until cooked through.

Can you use olive oil instead of vegetable or canola oil?

It’s up to everyone’s preference, I suppose. You can use any Oil of your choice.
