This is almost identical with my ‘Monkey Bread’. Using the same ingredients to make Cinnamon Rolls, you can make these yummy Cinnamon Bread bites easily. This is a perfect treat you can share with your quests. I guarantee your whole house will smell amazing while you are baking this Bread.


Makes

4 to 6 Servings *I used 27cm baking dish

Ingredients

1 & 3/4 cups Bread Flour OR Plain Flour *plus extra for kneading
2 teaspoons Dry Yeast
2 tablespoons Caster Sugar
1/4 teaspoon Cardamom Seeds *optional, removed from pods and ground
1/2 teaspoon Salt
1/2 cup (125ml) Warm Milk
1 Egg *room temperature, whisked
20g Butter *melted

Coating
40g Butter *melted
1/4 cup Caster Sugar
1 teaspoon Ground Cinnamon
Extra 20g Butter
2 tablespoons Brown Sugar
1 teaspoon Vanilla Extract

Icing
30g (1/4 cup) Icing Sugar
1/2 tablespoon Milk

Method
  1. Place Bread Flour (OR Plain Flour), Dry Yeast, Sugar, Cardamom Seeds and Salt in a large bowl, and blend well. Make a well in the centre and pour in Warm Milk, Egg and melted Butter, and mix well to form a soft dough. Knead for 2 to 3 minutes, gradually adding extra Flour as required, until smooth and elastic.
  2. Cover with a plate or plastic wrap, and set aside in a warm place for 1 hour or until doubled in size.
  3. Grease a baking dish OR cake tin with Butter. *I used 27cm baking dish. Please use a similar size dish OR cake tin.
  4. Place 40g Butter in a bowl and melt it. In another bowl combine Caster Sugar and Ground Cinnamon.
  5. Divide the dough and form lots of 2-3cm size small balls. Coat with melted Butter, then Cinnamon and Sugar mixture, and place evenly in a baking dish. Cover with plastic wrap and set aside in a warm place for 30-40 minutes. *Note: Save the leftover melted Butter.
  6. Preheat oven to 180℃.
  7. You probably have some leftover melted Butter. Add extra 20g Butter and melt it. Add Brown Sugar and Vanilla Extract, and mix well. Drizzle the mixture over the dough.
  8. Bake for 20 to 30 minutes OR until nicely browned. Mix Icing Sugar and Milk in a small bowl. Drizzle it over the Bread, but it is optional. *Note: These Cinnamon Bread bites have gooey sauce on the bottom.
