When my family have Tacos for dinner, we always end up having some leftover Tortillas. You might have your favourite way to enjoy the leftover Tortillas. This is may favourite ‘Quick and Easy’ way. You only need a frying pan to cook this delicious Egg & Cheese Tortilla. Add some extra ingredients that you have, such as Ham, Baby Spinach, Dried Tomato, Jalapeño, etc.

Ingredients

1 Tortilla *OR other type of Flatbread
2 Eggs
Sliced Cheese OR Shredded Cheese
Additional Ingredients *e.g. Ham, Baby Spinach, Dried Tomato, Jalapeño, etc.
Salt & Pepper
Oil for cooking

Method
  1. Heat a frying pan, non-stick preferred, over medium low heat, lightly oil it, and add Eggs. You may wish to break the Egg Yolks.
  2. Arrange additional Ingredients. I added some pieces of Ham and Baby Spinach today.

  3. Add some Sliced Cheese OR Shredded Cheese of your choice. Place a Tortilla on top, and cook until Egg is nicely browned and the Cheese is melted.

  4. Flip over and cook until Tortilla is also nicely browned. Sprinkle with some Salt & Pepper over the Eggs, and enjoy.
