
There are different forms of Sushi. ‘Chirasi-zushi’ is a rice-salad-like Sushi, and I often make it for my lunch. Sushi Rice can be made quickly and easily. You can mix other ingredients with the Rice, OR decorate the Rice with the ingredients, that can be anything you like. Today I used cooked Broccoli, Prawns and Egg.

Ingredients
Sushi Rice
1 serving (*about 200g) Cooked Japanese Short Grain Rice *must be hot
2 teaspoons Sugar
3 teaspoons Rice Vinegar
1/5 teaspoon Salt

Topping
80g Cooked Broccoli *cut into bite-size florets
80g Cooked Shelled Prawns
1 Egg
Salt
1 teaspoon Oil for cooking
2 tablespoons Edamame Beans *optional, frozen is fine
Japanese Mayonnaise *optional
Method
- Mix Rice Vinegar, Sugar and Salt in a bowl, that can be a serving bowl. Add hot cooked Short Grain Rice, mix well, then set aside and cool. *Note: I mixed frozen Edamame Beans into the Rice, so that the Rice cooled quickly.
- Prepare Broccoli and Prawns. I cooked Broccoli florets in salted water, then added shelled Prawns. When both were cooked, rinsed under cold water, and drained well.
- Whisk Egg in a small bowl, lightly season with Salt, heat Oil in a small frying pan over medium heat, and cook the Egg.
- Mix everything together OR decorate the Rice with the ingredients, drizzle with some Japanese Mayonnaise, and enjoy.
