I am a Mackerel lover. It is not easy to find fresh Mackerel where I live, but canned Mackerel are available form any supermarkets. Woolworths stores started selling very reasonably priced large-size canned Mackerel and I gave up my loyalty to Coles stores. If you love Mackerel, you love this dish.

Ingredients
200 to 300g Canned Mackerel in Water
*Note: Today I used 425g can. The fish weighed about 270g after drained.
1 small piece Ginger *sliced into fine strips
1 tablespoon Sake (Rice Wine)
1 tablespoon Mirin
2 tablespoons Soy Sauce
2 cups (*180ml cup) Japanese Short Grain Rice
2 Spring Onions *finely chopped
Toasted Sesame Seeds
Toasted Nori
Method
- Wash Rice then cook as normal.
- Drain the canned Mackerel, remove bones, and roughly flake. Place in a heat-proof bowl, add Ginger, and sprinkle with Sake, Mirin and Soy Sauce. Heat in the microwave for 1 minute, take out and stir, then heat 1 more minutes.
- Add the mackerel mixture and finely chopped Spring Onion to freshly cooked hot rice, and mix to combine evenly.
- Enjoy with some Toasted Sesame Seeds OR/AND Toasted Nori as topping.

We always have a large can of mackerel in the cupboard as it makes very tasty fish patties. After reading your recipeis I have also bought a couple of the smaller John West cans of Mackerel fillets and will be trying one of your Mackerel recipes this weekend. Thanks Hiroko

Annie, it seems Mackerel is one of your favourite fish. It is my absolute favourite and canned Mackerel is so handy. I often use it for rice bowl dishes. I am wondering what you are going to cook.
