I am a Mackerel lover. It is not easy to find fresh Mackerel where I live, but canned Mackerel are available form any supermarkets. Woolworths stores started selling very reasonably priced large-size canned Mackerel and I gave up my loyalty to Coles stores. If you love Mackerel, you love this dish.

Ingredients

200 to 300g Canned Mackerel in Water
*Note: Today I used 425g can. The fish weighed about 270g after drained.
1 small piece Ginger *sliced into fine strips
1 tablespoon Sake (Rice Wine)
1 tablespoon Mirin
2 tablespoons Soy Sauce
2 cups (*180ml cup) Japanese Short Grain Rice
2 Spring Onions *finely chopped
Toasted Sesame Seeds
Toasted Nori

Method
  1. Wash Rice then cook as normal.
  2. Drain the canned Mackerel, remove bones, and roughly flake. Place in a heat-proof bowl, add Ginger, and sprinkle with Sake, Mirin and Soy Sauce. Heat in the microwave for 1 minute, take out and stir, then heat 1 more minutes.
  3. Add the mackerel mixture and finely chopped Spring Onion to freshly cooked hot rice, and mix to combine evenly.
  4. Enjoy with some Toasted Sesame Seeds OR/AND Toasted Nori as topping.
