This simple Mandarin Jelly is popular in Japan where I grew up, and it is absolutely easy to make. You only need 1 can (310g) of Mandarine Segments and Gelatine Powder. I often crave it when I am unwell. Today I made it for my husband who was in bed with a cold. It can be a lovely treat OR dinner dessert.

Makes

2 Servings

Ingredients

3/4 teaspoon (about 3g) Gelatine Powder
1 tablespoon Water
1 can (310g) Mandarine Segments in Syrup
1/2 cup (125ml) Syrup form the can of Mandarine Segments *Note: Read ‘Method 1’

Method
  1. Sprinkle Gelatine Powder into Water in a small bowl and soak for 5-10 minutes.
  2. You would have 1/2 cup Syrup form a can. If not enough, add some Water.
  3. Place Syrup in a saucepan, and bring to the boil, stirring occasionally. *Note: This process can be done using a heat-proof measuring jug and the microwave.
  4. Once it’s boiling, remove from heat, add soaked Gelatine, and mix well until Gelatine dissolves completely.
  5. Place the drained Mandarin Segments in the serving glasses, and pour the jelly mixture. When cool enough, leave in the fridge until set.
