When I want to make one more dish for dinner, I often make ‘Carrot & Walnut Salad’ because I always have Carrots and Walnuts. Today I added Dill and dressed the salad with Sour Cream, Mayonnaise and Lemon Juice for a change. It was delicious. If you prefer Mustard Dressing, the recipe is also included below.

4 Servings

Ingredients

2 large Carrots *about 350g
1/4 teaspoon Salt
1/4 Red Onion *thinly sliced OR finely chopped
1 tablespoon chopped Dill *You can add more
Black Pepper
1/2 cup Toasted Walnuts *coarsely chopped OR broken
1 tablespoon Sour Cream *OR Unsweetened Yoghurt
1 tablespoon Mayonnaise *I use Japanese Mayonnaise
1 teaspoon Lemon Juice

Method
  1. Peel Carrots and cut into thin strips. Add Salt and mix well.
  2. Add all other ingredients and mix to combine. You can save some Walnuts and add them on top before you serve. *Note: Allow it rest in the fridge for a few hours if you have time. The salad would taste better. Mix well before you serve.
  3. *Note: Instead of Sour Cream, Mayonnaise and Lemon Juice, you can dress this salad with the popular Mustard Dressing.

Mustard Dressing
1 to 2 teaspoons Wholegrain Mustard OR Dijon Mustard
1 tablespoon Lemon Juice
1/2 tablespoon White Wine Vinegar *optional, depends on the sourness of the Lemon Juice
1 teaspoon Sugar
1 tablespoon Olive Oil OR Sunflower Oil
