There are many recipes for this popular salad. Some people add Onion and Parsley, but I don’t. Some people use Orange Juice to dress the salad, but I believe it lacks sourness. This is how I make Carrot & Orange Salad. I like it simple so that I can enjoy the flavour of Carrot and Orange.

2 to 3 Servings

Ingredients

1 large Carrot *about 180g
1/4 teaspoon Salt
Black Pepper
1 tablespoon Olive Oil *OR Oil of your choice
1/2 tablespoon Lemon Juice
1/4 to 1/2 teaspoon Sugar
1 Orange

Method
  1. Cat Carrot into thin strips. Using a vegetable slicer, it would be easy to do.
  2. Place Carrot in a mixing bowl, add Salt, Black Pepper, Olive Oil (OR Oil of your choice), Lemon Juice and Sugar, mix well, and set aside.
  3. Remove the peel of Orange and cut the Orange in your favourite way. You may prefer cutting out the segments, but that would create some waste and it is not easy for my shaky hands. I cut it in half first, cut each half into 3 wedges, then cut each wedge into 3 pieces.
  4. Add the Orange pieces to the Carrot, squeeze out all the juice from the removed peel, and mix to combine. You can serve the salad immediately, but I recommend to leave it in the fridge for at least 15 minutes before serve.
