When my son was young, he hated most vegetables. If I have chopped up the vegetables finely, he would have tried to remove those particles. The best solution was to cook the vegetables in the flavour he loved, that was curry flavour, OR to mix the vegetables with something he loved. This is a very simple salad of uncooked Carrot that is mixed with Potato Chips. Any vegetable haters would fight over this salad.

Ingredients

1 large Carrot *sliced into thin strips
1 pinch Salt
1 to 2 tablespoons Salad Dressing of your choice
1/4 cup coarsely broken Good Quality Potato Chips (Crisps)

Method
  1. Place sliced Carrot in a bowl, add 1 pinch Salt and mix. Then add Dressing and combine well.
    *Today I used French Dressing. Creamy Caesar Salad Dressing, Ponzu, Japanese Mayonnaise, or any salad dressing would work.
  2. Set aside for 15 to 20 minutes. Add coarsely broken Potato Chips, mix to combine, and serve immediately.
  3. *Note: Today I used Kettle’s Potato Chips ‘CHILLI’ with Jalapeño and Red Chillies. I sprinkled with extra ground Chilli. This might be too spicy for young children.
