Drop Chicken Ball mixture into boiling Dashi Stock OR Chicken Stock to cook. It is an easy yet very nutritious soup. Adding Udon Noodles and some extra Vegetables makes this soup a very satisfying meal.

4 cups Dashi Stock or Chicken Stock
1 teaspoon Salt
1 tablespoon Soy Sauce

Chicken Balls

200 to 300g Chicken Mince
1 small piece Ginger *fine grated
1 to 2 Spring Onions
1/4 Carrot
1 to 2 Shiitake
1/2 Egg *optional
Salt & White Pepper

  1. Chop up Vegetables finely, and combine with Chicken Mince, finely grated Ginger, Egg and Salt & White Pepper. Mix well until well combined.
  2. Boil Dashi Stock OR Chicken Stock in a large saucepan or pot. Using a tablespoon, drop the chicken mixture into the boiling stock and cook until cooked thought. Season the soup with Salt and Soy Sauce.
  3. Sprinkle some chopped Spring Onion and serve.
