You have some Roast Chicken leftover? Try this simple noodle salad. It will be a very yummy light meal.

200g Harusame Noodles (Bean Thread Noodles)
1/2 to 1 Cucumber
5 to 6 leaves Cos Lettuce
Roast Chicken *skin removed

Dressing Ingredients

1 tablespoon Sugar
2 tablespoons Soy Sauce
2 tablespoons Rice Vinegar
1 tablespoon Sesame Oil
1 tablespoon Roasted Sesame Seeds
1 teaspoon Mustard *Optional

  1. Cook Harusame Noodles as instructed. Basically cook in boiling water until turns transparent. Rinse in cold water and drain well.
  2. Cut Cucumber and Cos Lettuce into thin strips. Tear Roast Chicken into strips.
  3. Combine all the Dressing Ingredients in a bowl and mix well.
  4. Put everything into a large mixing bowl, add the Dressing and mix well.
