You have some Roast Chicken leftover? Try this simple noodle salad. It will be a very yummy light meal.
200g Harusame Noodles (Bean Thread Noodles)
1/2 to 1 Cucumber
5 to 6 leaves Cos Lettuce
Roast Chicken *skin removed
1 tablespoon Sugar
2 tablespoons Soy Sauce
2 tablespoons Rice Vinegar
1 tablespoon Sesame Oil
1 tablespoon Roasted Sesame Seeds
1 teaspoon Mustard *Optional
- Cook Harusame Noodles as instructed. Basically cook in boiling water until turns transparent. Rinse in cold water and drain well.
- Cut Cucumber and Cos Lettuce into thin strips. Tear Roast Chicken into strips.
- Combine all the Dressing Ingredients in a bowl and mix well.
- Put everything into a large mixing bowl, add the Dressing and mix well.
