It’s been cold in Melbourne. Today I wanted to eat something warm and comforting. A noodle soup is a good option. I decided to cook a Soba Noodle Soup. I like to use Katsuo (Bonito) Dashi for the soup to eat with Soba Noodles. I added Chicken Mince and Spring Onion. It was a very simple dish, but it was warm and comforting, just what I wanted to eat. This is how I cooked it.

1 Serving

Ingredients

1 serving Soba Noodles
125g Chicken Mince *OR Chicken Fillet cut into bite-size pieces
1 Spring Onion *finely chopped
1/2 teaspoon Sesame Oil
Salt & White Pepper
Shichimi (Japanese Chilli Spice Mix) *I used Homemade Shichimi with Yuzu zest

Soup
1 cup Water
1/2 teaspoon Dashi Powder *I used Katsuo (Bonito) Dashi
1/2 teaspoon grated Ginger
1 tablespoon Potato Starch
1 tablespoon Mirin
1 tablespoon Soy Sauce

Method
  1. Combine all the Soup ingredients in a measuring jug OR bowl.
  2. Cook Soba Noodles in boiling water according to the instruction on the package.
  3. Meanwhile, heat Sesame Oil in a small frying pan OR saucepan, cook Chicken and lightly season with Salt & White Pepper. When Chicken is cooked, add finely chopped Spring Onion.
  4. Stir the prepared Soup very well, then add to the pan, and cook until the Soup thickens.
  5. Drain the cooked Soba Noodles, place in a serving bowl, cover with the Chicken Soup, sprinkle with Shichimi (Japanese Chilli Spice Mix), and enjoy.
