
It’s been cold in Melbourne. Today I wanted to eat something warm and comforting. A noodle soup is a good option. I decided to cook a Soba Noodle Soup. I like to use Katsuo (Bonito) Dashi for the soup to eat with Soba Noodles. I added Chicken Mince and Spring Onion. It was a very simple dish, but it was warm and comforting, just what I wanted to eat. This is how I cooked it.

Ingredients
1 serving Soba Noodles
125g Chicken Mince *OR Chicken Fillet cut into bite-size pieces
1 Spring Onion *finely chopped
1/2 teaspoon Sesame Oil
Salt & White Pepper
Shichimi (Japanese Chilli Spice Mix) *I used Homemade Shichimi with Yuzu zest
Soup
1 cup Water
1/2 teaspoon Dashi Powder *I used Katsuo (Bonito) Dashi
1/2 teaspoon grated Ginger
1 tablespoon Potato Starch
1 tablespoon Mirin
1 tablespoon Soy Sauce
Method
- Combine all the Soup ingredients in a measuring jug OR bowl.
- Cook Soba Noodles in boiling water according to the instruction on the package.
- Meanwhile, heat Sesame Oil in a small frying pan OR saucepan, cook Chicken and lightly season with Salt & White Pepper. When Chicken is cooked, add finely chopped Spring Onion.
- Stir the prepared Soup very well, then add to the pan, and cook until the Soup thickens.
- Drain the cooked Soba Noodles, place in a serving bowl, cover with the Chicken Soup, sprinkle with Shichimi (Japanese Chilli Spice Mix), and enjoy.
