I like to eat my ‘Chicken & Tofu Burgers’ with ‘Ponzu’ mixed with grated Daikon Radish and a little bit Chilli, but this ‘Teriyaki Sauce’ is also really good! ‘Teriyaki Sauce’ is usually made with Soy Sauce, Mirin and Sugar. For this dish, I added Rice Vinegar, that makes the sauce next level.

Ingredients

500g Chicken Mince
400 to 500g Firm Tofu *mashed
1 Onion *optional, finely chopped
1 small piece Ginger *grated
1/2 teaspoon Salt
1/2 teaspoon White Pepper
Oil for cooking
Toasted Sesame Seeds

Ingredients for Sauce

2 tablespoon Brown Sugar *OR White Sugar
2 tablespoon Mirin
4 tablespoons Soy Sauce
1/4 cup Sake (Rice Wine) OR Water
1 tablespoon Rice Vinegar
1/2 tablespoons Potato Starch OR Corn Starch *mixed with 1 tablespoon Water

Method
  1. Combine all ingredients well in a bowl. Roll mixture into balls. Flatten slightly.
  2. Heat small amount of Oil in a frying pan and cook until golden and cooked though.
  3. Place Sugar, Mirin, Soy Sauce, Sake (Rice Wine) and Rice Vinegar in a saucepan OR the cleaned frying pan, and bring it to the boil. Mix Potato Starch with Water and gradually add to the sauce, stirring, and cook until the sauce thickens.
  4. Combine ‘Chicken & Tofu Burgers’ with the sauce. I sprinkled with some Toasted Sesame Seeds.
