I like to eat my ‘Chicken & Tofu Burgers’ with ‘Ponzu’ mixed with grated Daikon Radish and a little bit Chilli, but this ‘Teriyaki Sauce’ is also really good! ‘Teriyaki Sauce’ is usually made with Soy Sauce, Mirin and Sugar. For this dish, I added Rice Vinegar, that makes the sauce next level.

Ingredients
500g Chicken Mince
400 to 500g Firm Tofu *mashed
1 Onion *optional, finely chopped
1 small piece Ginger *grated
1/2 teaspoon Salt
1/2 teaspoon White Pepper
Oil for cooking
Toasted Sesame Seeds
Ingredients for Sauce
2 tablespoon Brown Sugar *OR White Sugar
2 tablespoon Mirin
4 tablespoons Soy Sauce
1/4 cup Sake (Rice Wine) OR Water
1 tablespoon Rice Vinegar
1/2 tablespoons Potato Starch OR Corn Starch *mixed with 1 tablespoon Water
Method
- Combine all ingredients well in a bowl. Roll mixture into balls. Flatten slightly.
- Heat small amount of Oil in a frying pan and cook until golden and cooked though.
- Place Sugar, Mirin, Soy Sauce, Sake (Rice Wine) and Rice Vinegar in a saucepan OR the cleaned frying pan, and bring it to the boil. Mix Potato Starch with Water and gradually add to the sauce, stirring, and cook until the sauce thickens.
- Combine ‘Chicken & Tofu Burgers’ with the sauce. I sprinkled with some Toasted Sesame Seeds.
