Hurrah!!! Our local supermarket stores started selling thinly sliced pork belly. Now I don’t have to slice a half-frozen block by my aching hand. Thank the Asian population growth! There are so many dishes that can be cooked really quickly using the Pork thin slices. Here is one for you to try.


Makes

2 Servings

Ingredients

200g Thinly Sliced Pork Belly *cut into the size that is easy to eat
2 Tomatoes *Not-so-great Tomatoes are perfect!
2 servings Freshly Cooked Rice
1 Spring Onion *finely chopped

Sauce

1/2 tablespoon Curry Powder
2 tablespoons Soy Sauce
2 tablespoons Mirin
*Note: You can add Garlic and/or Ginger.

Method
  1. Combine Curry Powder, Soy Sauce and Mirin in a small bowl.
  2. Heat a frying pan over medium-high heat. Cook Pork Slices and Tomatoes. I cut Tomatoes just in half, but you can cut into smaller pieces.
  3. When Pork is slightly browned, add the sauce mixture and combine. It won’t take long for the sauce to thicken.
  4. Half fill a bowl with Freshly Cooked Rice, place Pork and Tomato on top, drizzle the sauce over and enjoy.
