Because I usually cook for four people, preparing a meal just for me can be oddly challenging. A ‘Donburi (Rice Bowl)’ dish is always a good option. I stock canned mackerel in my pantry for always as mackerel is my great favourite (and fresh mackerel is rarely available where I live), and the small 120g canned mackerel is just perfect for single serving. I have introduced my ‘Miso Mackerel Don’, here is another yummy and easy ‘Curry Mackerel Don’ which will never disappoint you.
Makes
1 Serving
Ingredients
1 can (125g) Mackerel in Brine
1/4 to 1/2 Onion *thinly sliced
1 clove Garlic *finely chopped
Green Vegetable such as Kale, Spinach, Cabbage, etc. *as required, cut into small pieces
1/2 tablespoon Oil
1 pinch Salt
1 teaspoon Curry Powder
2 tablespoons Sake (Rice Wine) OR Water
1 teaspoon Soy Sauce
1 serving Freshly Cooked Rice
Method
- Drain the Canned Mackerel and discard the brine.
- Heat Oil in a frying pan over a medium heat, cook sliced Onion, Garlic and Green Vegetable until onion is transparent. Season with Salt and Curry Powder.
- Add Mackerel, Sake (Rice Wine) and Soy Sauce, simmer over a low heat for a minute or so, and let all well combined.
- Half fill a bowl with freshly cooked rice and cover it with the Mackerel mixture.

Really enjoyed this recipe. Made a double quantity for two of us and it was delicious. Even has a small serve left over. I had two 125g cans of mackerel – one in spring water and one in olive oil. Drained both and they worked well together as the oil one was very moist.

Hi Annette. Thank you for trying the recipe and posting your positive comment. This is my all time favourite canned Mackerel dish. I am glad you enjoyed it. I don’t buy canned fish in oil because I always struggle to dispose the drained oil, but I have just realised that I can use it to cook Onion and other vegetables. I should try the Mackerel in oil next time.
