Because I usually cook for four people, preparing a meal just for me can be oddly challenging. A ‘Donburi (Rice Bowl)’ dish is always a good option. I stock canned mackerel in my pantry for always as mackerel is my great favourite (and fresh mackerel is rarely available where I live), and the small 120g canned mackerel is just perfect for single serving. I have introduced my ‘Miso Mackerel Don’, here is another yummy and easy ‘Curry Mackerel Don’ which will never disappoint you.
Canned Mackerel in Brine 1 *about 120g
Onion 1/4 to 1/2 *thinly sliced
Garlic 1 clove *finely chopped
Green Vegetable such as Kale, Spinach, Cabbage, etc. *as required, cut into small pieces
Oil 1/2 tablespoon
Salt a pinch
Curry Powder 1 teaspoon
Sake OR Water 2 tablespoons
Soy Sauce 1 teaspoon
Freshly Cooked Rice 1 serving
- Drain the Canned Mackerel and remove the brine.
- Heat Oil in a frying pan over a medium heat, cook sliced Onion, Garlic and Green Vegetable until onion is transparent. Season with Salt and Curry Powder.
- Add Mackerel, Sake and Soy Sauce, simmer over a low heat for a minute or so, and let all well combined.
- Half fill a bowl with freshly cooked rice and cover it with the Mackerel mixture.
