If you have some Dried Shelled Shrimps, this fried rice is absolutely easy to cook. What ingredients do you need? You would need Cooked Rice, 1 Spring Onion, 1 small clove Garlic and 1 Egg. Dried Shelled Shrimps are available from most Asian grocery stores. They are not cheap, but it is worth to stock Dried Shelled Shrimps as you can cook so many dishes with them.

Ingredients
2 tablespoonfuls Dried Shelled Shrimps
Boiling Water *optional
1 tablespoon Oil
1 Spring Onion *finely chopped
1 small clove Garlic *finely chopped
1 serving (about 200g) warm Cooked Rice
1 Egg *whisked
1/4 teaspoon Salt
White Pepper as required
1 teaspoon Soy Sauce
Method
- Place Dried Shelled Shrimps in a small bowl, add Boiling Water just enough to cover, and set aside while you are preparing other ingredients, then drain well. *Note: This process is optional. If Shrimps are small, and if you like the hard chewy texture, you don’t need to soften them.
- Prepare all other ingredients, make everything ready to use before you start cooking.
- Heat Oil in a frying pan (non-stick preferred) over medium heat, cook the softened Shrimps, Garlic and finely chopped Spring Onion until aromatic.
- Add warm Cooked Rice, stir for a few minutes, then add whisked Egg, and stir for a minute. Season with Salt and White Pepper, keep stirring, then sprinkle with Soy Sauce, and quickly stir and combine well.
