This salad is perfect for sandwich filling. I didn’t like the egg salad sandwich for a long time until I made this egg salad. This ‘Edamame & Egg Salad’ tastes like my Tartar Sauce, and the crunchy Edamame (young soy beans) are so good. If you can’t find Edamame where you live, Peas can be a substitute.


2 Servings


2 tablespoons Edamame Beans
2 Boiled Eggs *finely or coarsely chopped up
1 tablespoon finely chopped Onion
1 to 2 tablespoons Japanese Mayonnaise
1 tablespoon finely chopped Parsley
1 tablespoon finely chopped Pickled Cucumber
Salt & Pepper

  1. Thaw Edamame Beans if frozen. Place in a mixing bowl and season with 1 pinch Salt.
  2. Add all other ingredients and mix to combine. Season with Salt & Pepper to taste.
