When I cook Sushi Rice for a special occasion to entertain our guests, I often end up having some leftover Sushi Rice. Does it happen to you, too? You don’t waste it, do you? Leftover Cooked Rice is often used for Soup OR Fried Rice. Sushi Rice can be used in the same ways. Hot & Sour soup is perfect to use up Sushi Rice. Fried Rice is also good. The only thing you have to remember is that Sushi Rice is already seasoned. So, you need to season the Fried Rice cautiously.

Ingredients

1 serving Sushi Rice *about 160g, warmed
1 tablespoon Oil
1 Egg
40g Roast Pork, Ham, Sausage, etc.
1 Spring Onion *finely chopped
Salt & Pepper (OR Ground Chilli)
1 teaspoon Soy Sauce

Method
  1. Add Oil to the heated frying pan or wok over medium high heat, cook Egg, then add Roast Pork (OR Ham, Sausage, etc.) and stir. Add Spring Onion and warmed Sushi Rice, and stir for a few minutes.
  2. Cautiously season with Salt & Pepper (OR Chilli). Remove from the heat, sprinkle Soy Sauce over, and mix to combine.
  3. *Note: Iceberg Lettuce leaf that is torn into small pieces can be a great addition to this Fried Rice. Add it after Roast Pork.
