If you like Enoki mushrooms, you probably are familiar with a dish called ‘Nametake’. The other day I cooked a large batch of ‘Nametake’, and I have been enjoying eating it and also using it for cooking. Today I used it to cook this fried rice. So simple, yet delicious. Try it when you cooked ‘Nametake’ Enoki.

1 Serving

Ingredients

1 small clove Garlic *finely chopped
1 Spring Onion *finely chopped
1/4 cup (4 tablespoons) ‘Nametake’ Enoki

1 tablespoon Oil *I used Sunflower Oil
1 Egg *whisked
1 serving (about 180g) warm Cooked Rice
1/4 teaspoon Asian Chicken Bouillon Powder *optional
Salt & White Pepper

Method
  1. Heat Oil and Garlic in a frying pan over medium high heat. When aromatic, add Spring Onion and Nametake Enoki, and stir for a minute.
  2. Add whisked Egg and Cooked Rice, stir for a few minutes, add Asian Chicken Bouillon Powder and combine. Taste it, and season with Salt and White Pepper as required. *Note: DO NOT add too much Salt without tasting it. ‘Nametake’ is salty. You don’t need too much Salt.
