I used to make Gingerbread Characters with my children quite often when they were young. It was a fun family activity. Now, I don’t remember when was the last time I made Gingerbread. Today I made these Gingerbread Flavoured Cookies. You don’t need any special ingredients such as Molasses and Dark Brown Sugar. These are simple cookies that have the Gingerbread’s flavour.

24 Cookies

Ingredients

125g Butter *softened
1/2 cup Brown Sugar OR Dark Brown Sugar
1 large Egg
1 & 3/4 cup Self-Rising Flour
1 teaspoon Ground Ginger
1 teaspoon Ground Cinnamon

Method
  1. Preheat oven to 180℃. Line 2 baking trays (OR 1 large baking tray) with baking paper.
  2. Beat softened Butter and Brown Sugar until smooth and well combined. Beat in Egg and mix well. Add Flour and spices, and mix to form a dough.
  3. Roll the dough into 24 balls and place on the prepared tray(s). You may wish to press down slightly.
  4. Bake for 15 to 20 minutes or until golden and cooked through. Transfer to a wire rack and cool.
