Green Beans can be replaced with other Vegetables like Spinach, Carrot, Asian Mushrooms, Asparagus, Gobo, Broccoli, etc. This is one of the most popular ‘Ae-mono’, a type of Japanese salad, and my most favourite vegetable dish.

Ingredients
About 350g Green Beans
*Beans can be replaced with Spinach, Carrot, Japanese Mushrooms (eg. Shiitake & Shimeji), Broccoli, Asparagus or other vegetables.
‘Goma-ae’ Sauce
2 tablespoons Toasted Sesame Seeds *ground
1 tablespoon Sugar
2 tablespoons Soy Sauce
Method
- Grind Roasted Sesame Seeds, add Sugar and Soy Sauce and mix well to make sauce.
- Cut vegetables in bite size and boil until tender, then drain. If you use Shiitake or Shimeji, grill or stir fry on a frying pan.
- Combine vegetables and the sauce well.
