This salad is absolutely delicious thanks to the dried Shrimps. Dried and shelled Shrimps might be an unfamiliar ingredient for you, but it is available from most Asian grocery stores. Dried Shrimps are quite hard, so you need to soften them by soaking in boiling water. Chop up the softened dried Shrimps and add them to the salad. I am confident you would love the flavour. Those green leaves on top? Yes, they are Coriander. Don’t worry, you don’t need to add them.

Ingredients

2 tablespoons Dried Shelled Shrimps
120g Dried Harusame (Bean Thread Noodles)
1 small Carrot *about 100g
1/2 to 1 Continental Cucumber *find how to slice Cucumber into thin strips
1/4 Red Onion
Coriander Leaves *optional

Dressing
1 small clove Garlic *grated
1 tablespoon Sugar
2 tablespoons Fish Sauce
2 tablespoons Lemon Juice
1/4 teaspoon Chilli Flakes *OR Chilli as required

Method
  1. Soak Dried Shrimps in boiling water in a small bowl until soft. *Note: The softness depends on your preference.
  2. Cut all vegetables into thin slices OR strips, and place in a mixing bowl.
  3. Cook Dried Harusame (Bean Thread Noodles) in boiling water until soft, drain, cool in cold water, then drain well. Cut to 5-10cm in length and add to the mixing bowl.
  4. Drain the softened Shrimps, coarsely chop up, and add to the mixing bowl.
  5. Combine all the Dressing ingredients in a small bowl, and add to the mixing bowl. Mix everything well.
  6. Place the salad in a serving bowl, add some Coriander Leaves on top (*optional), and serve immediately.
