I looked for recipes for Quick Pickled Red Onion and I was disappointed with all of them. I don’t want to use a lot of Vinegar to pickle just 1 Onion. I don’t want to wait for several hours. Then, I ended up making this Instant Pickled Red Onion using a typical Japanese vinaigrette ‘Amazu’, that is made with Salt, Sugar and Vinegar. Super quick and easy, and tastes good to me.

Ingredients

1 Red Onion
1/2 teaspoon Salt
1 tablespoon Sugar
2 tablespoon Rice Vinegar *OR Vinegar of your choice

Method
  1. Thinly slice Red Onion in any direction you prefer. Using a vegetable slicer, it can be done easily. *Note: To reduce the spiciness, soak the sliced Red Onion in cold water, and drain well.
  2. Add Salt and mix well. Then add Sugar and Vinegar. You can enjoy it straight away, but set aside for at least 10-15 minutes for better flavour.
  3. *Note: Ground Chilli OR Pepper can be added.
