I looked for recipes for Quick Pickled Red Onion and I was disappointed with all of them. I don’t want to use a lot of Vinegar to pickle just 1 Onion. I don’t want to wait for several hours. Then, I ended up making this Instant Pickled Red Onion using a typical Japanese vinaigrette ‘Amazu’, that is made with Salt, Sugar and Vinegar. Super quick and easy, and tastes good to me.
Ingredients
1 Red Onion
1/2 teaspoon Salt
1 tablespoon Sugar
2 tablespoon Rice Vinegar *OR Vinegar of your choice
Method
- Thinly slice Red Onion in any direction you prefer. Using a vegetable slicer, it can be done easily. *Note: To reduce the spiciness, soak the sliced Red Onion in cold water, and drain well.
- Add Salt and mix well. Then add Sugar and Vinegar. You can enjoy it straight away, but set aside for at least 10-15 minutes for better flavour.
- *Note: Ground Chilli OR Pepper can be added.

Didn’t have any red onion, so I used a Sweet Vidalia Onion, shaved thin on a spiralizer.
Used 1 tbl of red wine vinegar and 1 tbl of apple cider vinegar. Delicious.

Thank you, Howard, for your comment. I googled to find out what Vidalia Onion is. Google says it is a sweet onion. I never knew Onion could be sweet. 1 tablespoon of each Red Wine Vinegar and Apple Cider Vinegar sounds delicious. I want to taste your Pickled Vidalia Onion!!!
