Do you like Kimchi? Have you ever mixed it with boiled Potato? If you haven’t, try it next time when you have both. It is absolutely simple to make and really tasty. Kimchi is very sour, but the sourness is not overwhelming when mixed with Potato. Japanese Mayonnaise can be added.

Ingredients
2 Potatoes *about 400g
Salt for cooking
1/2 cup Kimchi *add more if you like
1 to 2 teaspoons Sesame Oil
1 Spring Onion *finely chopped
Method
- Peel Potatoes, cut into small pieces, and cook in salted water until soft.
- Cut Kimchi into small pieces if large, and place into a mixing bowl. Add Sesame Oil and finely chopped Spring Onion, and mix well.
- When Potato pieces are soft, drain well, then add the hot Potato pieces to Kimchi mixture. Stir to combine, and serve warm or cold.
- *Note: Japanese Mayonnaise is a yummy addition.

This was so so good! I used Yukon gold potatoes. I didn’t have spring onion and devoured it before putting Mayo on it. Thanks

Thank you, Alexis. I am glad to know you enjoyed it. To some people, mixing Kimchi and Potato (and Mayo) sounds crazy. But I thought it was yummy. My daughter said it was yummy, too.
