
‘Katsu’ is a Japanese abbreviation for cutlets. Following the pattern of naming Don (Rice Bowl) dishes, cutlets on rice is called ‘Katsu Don’. As it is served with Miso Sauce, the dish is called ‘Miso Katsu Don’. It is a popular dish in Kurashiki City, Okayama, where I used to live.

Ingredients
2 servings Freshly Cooked Cooked Rice
Shredded Cabbage as required
4 Tonkatsu (Pork Cutlets)
Sweet Miso Sauce
3 tablespoons Miso
1 & 1/2 tablespoons Sugar
3 tablespoons Mirin
1 tablespoon Soy Sauce
*Alter the amount of Sugar and Mirin depending on the type of Miso you use. Darker colour Miso has stronger flavour.
Method
- Cook Tonkatsu (Pork Cutlets).
- To make Sweet Miso Sauce, combine all the ingredients in a heat-proof bowl, and heat in the microwave for 1 minute and stir well.
- Half fill a bowl with rice and cover it with some shredded Cabbage and place the sliced Tonkatsu on top. Pour some Sweet Miso Sauce on the Tonkatsu and serve.

Thank you for the comment, Chris. My dishes are all easy to make. Some are time-consuming but not difficult. I started writing my recipes for my children but just thinking of someone I don’t know is trying my recipes is to exciting!
