Japanese Clear Soup is something I occasionally crave. This ‘Nori Soup’ is a super quick & easy one. It tastes really good and surprisingly comforting. When I need a simple soup really quickly, no other soup can be easier than this one. This recipe is for 1 serving, and it will be easy to multiply.

Makes

1 Serving

Ingredients

1 cup Dashi Stock *OR 1 cup Water & 1/3 teaspoon Dashi Powder
*Note: Today I used Katsuo (Bonito) Dashi
1/4 teaspoon Salt
3/4 teaspoon Soy Sauce
1 teaspoon Sake (Rice Wine)
1 sheet Toasted Nori
Toasted Sesame Seeds
Finely chopped Spring Onion

Method
  1. Heat Dashi Stock (OR Water and Dashi Powder) in a saucepan, add Salt, Soy Sauce and Sake (Rice Wine), and bring to the boil.
  2. Tear Toasted Nori sheet into bite-size pieces and place in a soup bowl. *Note: Nori must be toasted. If Nori doesn’t smell good, toast it over flames until aromatic and crispy.
  3. Pour the hot soup over Nori, add some Toasted Sesame Seeds and finely chopped Spring Onion, and enjoy.
