This is a super simple and refreshing dish of Udon Noodles. The main ingredient is a Tomato. If it is sweet enough, you don’t need to add Sugar, but I added 1 pinch today. Cooked Udon Noodles can be warmed in boiling water. Except for that, you don’t need to cook anything. It’s a perfect simple meal to prepare on a hot summer day. The dish lacks protein. I added a Boiled Egg.

Ingredients
1 Cooked Udon Noodles
1/2 to 1 sheet Toasted Nori *torn into bite-size pieces
Finely chopped Spring Onion
Toasted Sesame Seeds
1 Boiled Egg *OR other protein such as Cooked Chicken
Sauce
1 small clove Garlic *grated
1 to 2 teaspoons Gochujang (Korean Spicy Miso)
2 teaspoons Soy Sauce
1 teaspoon Sesame Oil
1 Ripe Tomato *cut into bite-size pieces
1 pinch Sugar *optional
Method
- Heat Cooked Udon Noodles in boiling water, then drain.
- Combine all the Sauce ingredients in a bowl, add drained Udon Noodles, and mix to combine. Add Toasted Nori and combine.
- Sprinkle with some finely chopped Spring Onion and Toasted Sesame Seeds on top, add Boiled Egg (OR other protein such as Cooked Chicken), and enjoy.
