You might think Nori is only for Sushi Rolls. It’s a sea plant processed into thin sheet. You can use it for many dishes. I often use it for salads. ‘Cabbage & Nori Salad’ is just an example. Today I dressed thinly sliced Cabbage with Gochujang Mayo Dressing, and added plenty of TOASTED Nori. You got to try this salad. It is delicious.
Makes
2 to 4 Servings
Ingredients
1/4 Cabbage *about 200g
1/8 Onion *OR 1 Spring Onion, I used Red Onion
2 sheets Nori *TOASTED
Gochujang Mayo Dressing
1 teaspoon Toasted Sesame Seeds
1 teaspoon Gochujang (Korean Spicy Miso)
1 teaspoon Soy Sauce
1 teaspoon Sesame Oil
1/2 teaspoon Rice Vinegar
1 & 1/2 tablespoons Japanese Mayonnasie
Method
- Combine all the Dressing ingredients in a mixing bowl.
- Thinly slice Cabbage and Onion, add to the bowl, and mix to combine.
- Toast Nori sheets over flames, tear them into small pieces, and add to the bowl. Mix to combine and serve immediately.

Thanks Hiroko, this was delicious. I love your site, so many variations on a theme so I can choose something based on available ingredients or what flavours I feel like or something to complement other dishes.
I made it almost as written except I used the packaged Korean seasoned, roasted nori snacks, torn by hand. Probably not a health or budget conscious way to do the nori but tasted great.

Jane, thank you for your comment. Korean seasoned fried Nori are yummy, aren’t they? I don’y buy them often because I just don’t want to make plastic waste, but I love them. And I believe they are suitable for this salad.

Hi Hiroko, I made this today and it was absolutely delicious. I love how simple it is too. I want to make a batch of the Gochujang Mayo dressing to try with other veegtables. I think it’ll go great with something like asparagus 🙂 Question, do you have an instagram? If not, do you plan on making one in the future? I would love to see what you make in your day to day life & I also would like to share pictures with you of the yummy food I make from your recipes.
