When you crave something sweet just for yourself but have nothing, a mug cake is a good option if you have a microwave. Most mug cakes can be made in five minutes. I have shared a variety of mug cake recipes on this website. Here is another recipe for you to try, but it’s not a cake. It’s a rather large Chocolate Chip Cookie. If you don’t have Chocolate Chips, just chop up a piece of Chocolate. Today I baked it in my mini oven toaster using its oven function. It took 15 minutes to bake.

Makes

1 x 10cm Cookie

Ingredients

1 tablespoon (15g) Butter *melted
1 tablespoon Brown Sugar OR White Sugar
1 pinch Salt
1/2 tablespoon Milk
3 tablespoons Self-Raising Flour
1 tablespoon Chocolate Chips
1 tablespoon Chopped Walnuts *optional

Method
  1. Place Butter in a heat-proof bowl and heat in the microwave until melt. It took 15 seconds using my 1000W microwave.
  2. Add Brown Sugar (OR White Sugar), Salt and Milk, and mix well. Add Self-Raising Flour and mix well. Add Chocolate Chips and Walnuts, and mix to combine.
  3. Line a small baking tray with baking paper, spoon the dough on the tray, and form a flat round. Bake in the preheated oven OR oven toaster at 180℃ for 12 to 15 minutes OR until golden.

  4. The cookie will harden when cooled, but I ate it while it was still soft. It was hard to wait.
