
Are you looking for a new way to cook Chicken Fillet? Try this super easy recipe. Season with Salt and Pepper, coat with Potato Starch, pan-fry, then add this Sweet & Sour Sauce that can be made with Sugar, Soy Sauce, Rice Vinegar and Sesame Oil. Pan-fried Chicken Fillet is a little boring, but this sauce makes it special.

Ingredients
1 Chicken Breast Fillet *About 300g
Salt & Peper
2 to 3 tablespoons Potato Starch OR Corn Starch
Oil for cooking
Sweet & Sour Sauce
1/2 Spring Onion *lighter colour parts, finely chopped
1/2 tablespoon Sugar *alter the amount to suit your taste
1 tablespoon Soy Sauce
1 tablespoon Rice Vinegar
1 teaspoon Sesame Oil
1 teaspoon grated Ginger OR Garlic *OR both
Chilli Flakes OR Fresh Chilli as required *OR Chilli Sauce
Method
- Combine the Sweet & Sour Sauce ingredients in a small bowl.
- Slice Chicken Breast Fillet in half and use a meat mallet to pound the thick parts and make them even thickness. Season with Salt & Pepper, and coat with Potato starch completely.
- Heat 2 tablespoons Oil in a frying pan over medium high heat, cook Chicken until nicely browned and cooked though. *Note: You may prefer deep-frying. Shallow-frying can be tricky because Oil could splatter badly.
- Pour the Sweet & Sour Sauce over the cooked Chicken, and serve with Vegetables.
