Japan has an amazing Sweet Potato called ‘Satsumaimo’, that has a superior flavour and texture. Baked ‘Satsumaimo’ is a very popular snack. My mother often steamed it because baking was not the easiest method to cook it as no one had the oven in those days. Leftover steamed ‘Satsumaimo’ could be grilled or simply pan-fried. Today I cooked Australian orange coloured Sweet Potato in the same way.

Ingredients

1 medium Sweet Potato
1 tablespoon (15g) Butter
1 pinch Salt
Ground Cinnamon as required
1 to 2 teaspoons Brown Sugar
*Note: You can use Vegetable Oil to fry and season with Salt & Spices (OR Herbs) of your choice for savoury version.

Method
  1. Wash Sweet Potato and cut into 15mm thick pieces. Steam for 10 minutes OR until soft.
  2. Melt Butter in a frying pan over medium heat, cook the steamed Sweet Potato until nicely browned on both sides. Sprinkle with Salt, Ground Cinnamon and Brown Sugar, and mix to combine.
  3. *Note: You can use Vegetable Oil to fry and season with Salt & Spices (OR Herbs) of your choice for savoury version.
