Pork and Miso go very well together. ‘Butajiru’, OR ‘Tonjiru’, is a very popular Pork and Miso soup. You need a variety of ingredients to make it, but this simple Pork and Cabbage only version is also delicious. You can add other vegetables such as Onion, Carrot, Shiitake, etc.

Ingredients

2 cups Soup Stock of your choice *Today I used Unsalted Chicken Stock
100 to 150g Pork *thinly sliced
2 Cabbage Leaves
1 to 2 tablespoons Miso *Today I used 1 heaped tablespoon of White Miso
1 Spring Onion *finely chopped
Shichimi (Japanese Chilli Spice Mix)

Method
  1. Slice Pork thinly and cut Cabbage leaves into 3-4cm pieces.
  2. Heat Stock and Cabbage in a saucepan, bring to the boil and cook until Cabbage is cooked. Add thinly sliced Pork.
  3. When Pork is cooked, add Miso. Remove the soup from the heat just before it starts to boil.
  4. Sprinkle with finely chopped Spring Onions. Shichimi (Japanese Chilli Powder) is also recommended to add extra flavour.
