Pork and Miso go very well together. ‘Butajiru’, OR ‘Tonjiru’, is a very popular Pork and Miso soup. You need a variety of ingredients to make it, but this simple Pork and Cabbage only version is also delicious. You can add other vegetables such as Onion, Carrot, Shiitake, etc.

Ingredients
2 cups Soup Stock of your choice *Today I used Unsalted Chicken Stock
100 to 150g Pork *thinly sliced
2 Cabbage Leaves
1 to 2 tablespoons Miso *Today I used 1 heaped tablespoon of White Miso
1 Spring Onion *finely chopped
Shichimi (Japanese Chilli Spice Mix)
Method
- Slice Pork thinly and cut Cabbage leaves into 3-4cm pieces.
- Heat Stock and Cabbage in a saucepan, bring to the boil and cook until Cabbage is cooked. Add thinly sliced Pork.
- When Pork is cooked, add Miso. Remove the soup from the heat just before it starts to boil.
- Sprinkle with finely chopped Spring Onions. Shichimi (Japanese Chilli Powder) is also recommended to add extra flavour.
