Mackerel is my absolutely favourite fish and I always stock some cans of ‘Mackerel in Brine’ in my pantry. Using one can, you can create a variety of Rice Bowl dishes and I have shared the recipes of those on this website. Here is another one to share. This is a super easy Mackerel Curry.

1 Serving

Ingredients

1 can (125g) Mackerel in Brine

1/4 to 1/2 Onion *thinly sliced
1 small clove Garlic *finely chopped
1/2 teaspoon grated Ginger
1 teaspoon Oil
1 teaspoon Curry Powder
1/2 to 1 Tomato *cut into small pieces
2 tablespoons Sake (Rice Wine) OR Water
1/2 tablespoon Soy Sauce
1 serving warm Cooked Rice

Method
  1. Drain the Canned Mackerel and discard the brine. Break into bite-size pieces.
  2. Heat Oil in a small frying pan over a medium heat, cook sliced Onion and Garlic until Onion is transparent. Add Ginger and Curry Powder, stir, then add Tomato and Sake (OR Water).
  3. Add Soy Sauce and Mackerel, simmer over a low heat for a minute or so, stirring occasionally.
  4. Half fill a bowl with warm Cooked Rice and cover it with the Mackerel Curry mixture.
