Mackerel is my absolutely favourite fish and I always stock some cans of ‘Mackerel in Brine’ in my pantry. Using one can, you can create a variety of Rice Bowl dishes and I have shared the recipes of those on this website. Here is another one to share. This is a super easy Mackerel Curry.

1 Serving
Ingredients
1 can (125g) Mackerel in Brine
1/4 to 1/2 Onion *thinly sliced
1 small clove Garlic *finely chopped
1/2 teaspoon grated Ginger
1 teaspoon Oil
1 teaspoon Curry Powder
1/2 to 1 Tomato *cut into small pieces
2 tablespoons Sake (Rice Wine) OR Water
1/2 tablespoon Soy Sauce
1 serving warm Cooked Rice
Method
- Drain the Canned Mackerel and discard the brine. Break into bite-size pieces.
- Heat Oil in a small frying pan over a medium heat, cook sliced Onion and Garlic until Onion is transparent. Add Ginger and Curry Powder, stir, then add Tomato and Sake (OR Water).
- Add Soy Sauce and Mackerel, simmer over a low heat for a minute or so, stirring occasionally.
- Half fill a bowl with warm Cooked Rice and cover it with the Mackerel Curry mixture.
