This is Quick & Easy version of my ‘Gochujang Chicken’. Because Chicken Fillets are cut into bite-size pieces, it is easy to eat with chopsticks. That’s actually important for me because I most likely eat this dish with Rice. And it is much quicker to cook. For a larger serving, you can simply multiply the recipe.

Ingredients

300 to 400g Chicken Thigh Fillets *OR Breast Fillets
Salt & White Pepper
2 tablespoons Potato Starch OR Corn Starch
1 to 2 tablespoons Oil
Toasted Sesame Seeds

Sauce
1 clove Garlic *grated
1 tablespoon Soy Sauce
1 tablespoon Mirin
1 tablespoon Gochujang (Korean Spicy Miso)
1 tablespoon Ketchup
1/2 teaspoon Sugar

Method
  1. Combine all the Sauce ingredients in a small bowl. Alter the amount of each ingredient to suit your taste. You may wish to add more Sugar.
  2. Cut Chicken Fillets into bite-size pieces and lightly season with Salt & White Pepper. Coat them with Potato Starch.
  3. Heat Oil in a large frying pan over medium heat and cook Chicken Fillets until both sides are nicely browned and cooked though. They should become crispy. Remove the excess oil in the pan using paper towel.
  4. Lower the heat to medium low, add the Sauce, and mix to combine. Sprinkle with some Toasted Sesame Seeds and serve.
