When you want to make cake OR biscuits but you don’t have enough time, this recipe might help you. These sweet and fluffy Sultana Buns can be made in 20 minutes after you decided to make them. You may wish to add Chocolate Chips instead of Sultanas. The recipe is very versatile. It’s super simple and easy.

Ingredients

1/4 cup (60g) Butter OR Margarine *softened, slightly melted is fine
1/4 cup Caster Sugar *plus extra to sprinkle
1 pinch Salt
1 Egg
1 cup Self-Raising Flour
1/4 teaspoon Bi-carb Soda *optional
1/4 cup Sultanas
1/4 cup Milk
1/2 teaspoon Lemon Juice *optional
*Note: Lemon Juice reacts with Bi-carb Soda and makes the Buns extra soft, but it is optional.
*Note: You can add Vanilla OR Cinnamon, etc.

Method
  1. Preheat oven to 180℃. Line a baking tray with baking paper.
  2. Whisk Butter (OR Margarine), Sugar and Salt in a mixing bowl until creamy, add Egg and whisk well. Add other ingredients and use a spatula OR large spoon to mix well.
  3. Spoon the mixture on the prepared tray and form 6 buns. Sprinkle some Sugar over the buns, but it is optional.
  4. Bake for 12 to 15 minutes OR until nicely browned.
