Here is another simple Harusame Soup for you to try. It’s super quick and easy to prepare. First you make the soup. You can season it as spicy as you want. Today I added 1 & 1/2 teaspoons Toban Djan (Chilli Bean Sauce) and some Rāyu (Chilli Oil), and it was hot enough and still enjoyable for me. You may wish to add more.
100g thinly sliced Pork Belly *cut into bite-size pieces
40g Dry Harusame Noodles (Bean Thread Noodles)
1 thick Spring Onion *sliced diagonally
Rāyu (Chilli Oil) *optional
300ml Chicken Stock *OR 300ml Water & 1 teaspoon Asian Chicken Bouillon Powder
1 small clove Garlic *grated
1/2 teaspoon grated Ginger
1 to 2 teaspoons Toban Djan (Chilli Bean Sauce) *add more if you like
1 teaspoon Soy Sauce
1 teaspoon Oyster Sauce
1/2 teaspoon Sesame Oil
- Prepare all ingredients before you start cooking.
- Heat Chicken Stock in a saucepan, add other Soup ingredients except Salt, and bring to the boil. Taste it, and add some Salt if required. Today I didn’t add Salt.
- Add Pork to the boiling Soup. When colour has changed, add Dry Harusame Noodles and Spring Onion, and cook until the noodles are soft. It won’t take long.
- Add some Rāyu (Chilli Oil) for extra heat, and enjoy.
