‘Soboro’ means crumbled meat. This is not an authentic Japanese dish, but this is my family’s favourite. It is so easy to make even for children.

Ingredients
500g Pork Mince
1 tablespoon Oil
1 small piece Ginger *finely grated
1 pinch Salt
Frozen Mixed Vegetables 2 cups *OR 1 large Carrot, 1-2 cups Peas and Corn
2 tablespoons Sugar
4 to 5 tablespoons Soy sauce
1 to 2 tablespoons Mirin
2 to 3 teaspoons Toban Djan (Chili Bean Sauce)
4 servings Cooked Rice
Method
- Heat Oil in a frying pan and cook Pork Mince and finely grated Ginger, add 1 pinch of salt.
- When Pork changed colour, add Frozen Mixed Vegetables, Sugar, Mirin, Soy Sauce and Toban Djan, and cook until the sauce is almost gone.
- Half fill a bowl with freshly cooked rice and cover it with the meat mixture.
