They look like fried chicken, but they are Tofu. This is a yummy ‘Donburi’ dish for vegetarians. If you omit the egg on top, this can be vegan. I used ALDI’s Organic Tofu, but any firm type Tofu can be used. Coating the Tofu pieces with Potato Starch is essential. The layer of Starch will turn jelly-like when combined with the sauce. Even the meat-lovers would enjoy this dish.
Makes
2 Servings
Ingredients
250g Firm Tofu
3 to 4 tablespoons Potato Starch *OR Corn Starch
1 to 2 tablespoons Oil
1 Spring Onion *finely chopped
Toasted Sesame Seeds
2 servings warm Cooked Rice
2 ‘Onsen Tamago’ OR softly cooked Eggs *optional
Marinade Ingredients
1 clove Garlic *grated
1 small piece Ginger *grated
1 tablespoon Soy Sauce
1 tablespoon Sesame Oil
Sauce Ingredients
1 tablespoon Sugar
2 tablespoons Soy Sauce
1 tablespoon Mirin
1 tablespoon Sake (Rice Wine) OR Water
Method
- Combine all the Marinade ingredients in a small bowl.
- Cut or break Firm Tofu to bite-size pieces. Add to the Marinade and mix to combine. The Tofu pieces will soak up the Marinade. Set aside for 10 minutes.
- Combine all the Sauce ingredients in a small bowl.
- Drain Tofu Pieces to remove excess liquid, and coat the Tofu pieces with Potato Starch (OR Corn Starch). Heat Oil in a frying pan over medium heat, and cook until nicely browned. Add the Sauce and combine well.
- Half fill a bowl with warm Cooked Rice, place ‘Onsen Tamago’ and Tofu. Sprinkle some finely chopped Spring Onion and Toasted Sesame Seeds on top.

So, where is the egg used in this recipe?

Egg is an optional addition. I usually cook Eggs in the microwave and place one Egg each on top. Poached Eggs would be nice, too. You can find how to cook Eggs in the microwave at http://www.hirokoliston.com/onsen-tamago/
