‘Nametake’ is cooked Enoki Mushrooms in sweet soy sauce flavour. It has gelatinous slimy texture and very popular in Japan as a condiment for Rice. It is also good to eat with Tofu. Today I made a rice bowl dish using the three foods, Rice, Tofu and ‘Nametake’. If you like Tofu, you would enjoy this dish, which is light, gentle to stomach, fairly healthy, and vegetarian (actually vegan). And it is quite comforting for me.

Ingredients

150 to 200g Silken Tofu *OR soft type Tofu
1 serving warm Cooked Rice
3 to 4 tablespoons ‘Nametake’ Enoki
1 softly cooked Egg (e.g. Poached Egg) *OR uncooked Egg Yolk
Spring Onion *finely chopped
Toasted Nori *torn into small pieces OR shredded
Soy Sauce

Method
  1. Break OR cut Silken Tofu (OR soft type Tofu) into bite-size pieces, place in a shallow bowl, and heat in the microwave for 1 minutes. Then set aside for 1-2 minutes, so that a lot of water would come out fairly quickly.

  2. Half fill a bowl with warm Cooked Rice. Drain the Tofu and place on the Rice. Cover with ‘Nametaki’ Enoki, place Egg on top, and sprinkle with some finely chopped Spring Onion and Toasted Nori.
  3. Drizzle with some Soy Sauce as required, and enjoy.
