They say that Melbourne, where I live, has the largest Greek population of any city in the world outside of Greece. Thanks to them, we can enjoy a lot of beautiful Greek food. Greek flat bread and dips are so popular, and one of my favourites is ‘Tzatziki’. Because it is easy to make, and home-made ‘Tzatziki’ is much better than store-bought ones, I recommend you to make it yourself. This is a perfect sauce for grilled lamb meat, too.


Ingredients

1/2 cup Greek Style Yoghurt
1 Lebanese Cucumber *1/2 if large
1 small clove Garlic *finely chopped
1/2 tablespoon Fresh Dill Leaves *coarsely chopped
Salt to taste
Extra Virgin Olive Oil *optional

Method
  1. Coarsely grate Cucumber. Add 1 pinch of Salt and massage, then set aside. *Note: A lot of water would come out of the cucumber. Salt would help this process.
  2. Place Yoghurt, Garlic and Dill in a bowl. Squeeze the grated cucumber and remove the water, then add to the bowl. Stir to combine. Season with salt, drizzle some Olive Oil over if you like. Serve with vegetable sticks, flat bread or crackers.
