I have seen this Cabbage & Cucumber Salad in many photos that tourists took at restaurants in Ukraine. I tried to recreate it. I have many Coleslaw recipes on this website. I made this salad in a very similar way. I used White Wine Vinegar add Sunflower Oil. I added Dill & Spring Onion as I always see them in the photos. I think I could have added some Garlic as well.


4 Servings


1/6 Cabbage *thinly sliced
1 Cucumber *slice to about 2mm thin
*Note: Prepare Cabbage and Cucumber about 300g in total
1/2 teaspoon Salt
2 Spring Onions *finely chopped
2 tablespoons coarsely chopped Dill
2 tablespoons Sunflower Oil
2 tablespoons White Wine Vinegar *OR Vinegar of your choice
1 pinch Sugar *optional, depending on the sourness of the Vinegar you use
Ground Black Pepper
*Note: A small amount grated Garlic could be a good addition

  1. Place sliced Cabbage and Cucumber in a mixing bowl, add Salt, mix to combine, and set aside for 15 to 30 minutes.
  2. Squeeze (OR press) to remove excess water and add all other ingredients. Mix well to combine evenly. Add extra Salt if required. *Note: A small amount of grated Garlic could be a good addition.
