I have seen this Cabbage & Cucumber Salad in many photos that tourists took at restaurants in Ukraine. I tried to recreate it. I have many Coleslaw recipes on this website. I made this salad in a very similar way. I used White Wine Vinegar add Sunflower Oil. I added Dill & Spring Onion as I always see them in the photos. I think I could have added some Garlic as well.

Ingredients
1/6 Cabbage *thinly sliced
1 Cucumber *slice to about 2mm thin
*Note: Prepare Cabbage and Cucumber about 300g in total
1/2 teaspoon Salt
2 Spring Onions *finely chopped
2 tablespoons coarsely chopped Dill
2 tablespoons Sunflower Oil
2 tablespoons White Wine Vinegar *OR Vinegar of your choice
1 pinch Sugar *optional, depending on the sourness of the Vinegar you use
Ground Black Pepper
*Note: A small amount grated Garlic could be a good addition
Method
- Place sliced Cabbage and Cucumber in a mixing bowl, add Salt, mix to combine, and set aside for 15 to 30 minutes.
- Squeeze (OR press) to remove excess water and add all other ingredients. Mix well to combine evenly. Add extra Salt if required. *Note: A small amount of grated Garlic could be a good addition.
