This is a unique soup. According to some Ukrainian recipes that I found, the soup is often cooked with Oil, Flour, Water and Cucumber Peel, then cooled and combined with diced Cucumber. I made it in an easier way. This is basically a soup version of Tzatziki. It is super easy to make, perfect on a hot day as you don’t need to cook anything, very refreshing, healthy and nutritious.


Makes

2 to 3 Servings

Ingredients

1 Cucumber *cut into very small pieces
1 small clove Garlic *grated
1/4 teaspoon Salt
1-2 teaspoons Olive Oil OR Sunflower Oil
1 cup Unsweetened Yoghurt *I used Greek Yoghurt
1-2 teaspoons Lemon Juice
1 cup Cold Water
2 tablespoons chopped Dill
1 thin Spring Onion *finely chopped
*Note: You may wish to add Mint, Parsley, OR other Herbs
Salt
Pepper *optional

Method
  1. Place Cucumber and Garlic in a bowl, add Salt and Olive Oil (OR Sunflower Oil), mix well and set aside while you are preparing other ingredients. *Note: DO NOT discard any liquid.
  2. In a separate bowl, combine Yoghurt, Lemon Juice and Cold Water. Add Cucumber mixture, Dill and Spring Onion, and mix well. Season with Salt. Leave in the fridge to chill for 30 minutes.
  3. Before you serve the soup, mix it well. You may wish to add some Ground Pepper. Today I enjoyed this soup with Garlic & Dill ‘Pampushky’.
