Gently bashed and broken Cucumber gets seasoned better. It is a very popular technic in Japan. This is a super easy and quick salad. Just mix Cucumber with your favourite Kimchi. The key ingredient is Sesame Oil. The saltiness, sourness and spiciness are deliciously combined by the Sesame Oil.

Ingredients

1 Continental Cucumber *about 300g, OR 2 Lebanese Cucumbers
1/2 teaspoon Salt
1 to 2 teaspoons Sesame Oil
1/2 cup Kimchi
Toasted Sesame Seeds

Method
  1. Wash Cucumber and place it on the cutting board. Use a rolling pin to bash gently until it cracks. Break or cut it into bite-size pieces.
  2. Place Cucumber in a mixing bowl, add Salt and mix well. Add Sesame Oil and mix well. Add Kimchi and combine. Sprinkle with some Toasted Sesame Seeds. Serve immediately.
